A thermostat or a rotary boiler cooks dishes using the Sous Vide technology (cooking in a vacuum at low temperature). The product in a vacuum-pack is heated in a combi steam oven at a temperature of 65 to 100 C. Then the product is subjected to shock cooling to prevent bacterial growth. This preserves the organoleptic properties of the product and increases its shelf life. So, pork and poultry are stored up to 18 days, beef and veal: up to 30 days, vegetables: up to 45 days. The container is made of stainless steel, and it has a cover.
